If you soak the baked cakes with alcohol or a sugar syrup, the remain alot more moist, if you do not, it is best to wrap them tightly or freeze them, as they tend to go a bit dry if not, there is in most recipes about 70-80% fruit, nuts and raisins in a cake, not alot of cake to hold it together, if you soak the fruits for a few days before you make it, then an occasional soaking is not necessary, I soak mine and soak the fruits to, in apple juice and flavourings, I do a weekly brandy/rum and sugar syrup glaze, and I make mine in September, along with my Christmas puddings and German gingerbread that I coat in Chocolate in NovemberI wrap my cakes in brown butcher paper and aluminum foil so I can open and close them easily.
