- Q:I am looking to bake some Buffalo wings and am wondering if it's alright to bake them in an aluminum pan (disposable or otherwise). I will be brushing/basting the chicken in the sauce not 'drowning' the chicken in it. I have heard that acidic sauces like Tomato sauce (less acidic than wing sauce) should not be cooked in aluminum (stovetop pans bakeware) because of some chemical interaction, but I've seen those big foil pans full of pasta spaghetti sauce at wedding, etc. Is the whole acid/aluminum thing true or an old cooking myth?
- The aluminum pan thing is NOT a myth. Short term storage in an aluminum pan for catering an event as described above is generally fine, however if you intend to store acidic foods for more than a couple hours then stainless steel or plastic is the way to go. The acids will eventually discolor the aluminum pan and in severe cases even eat completely through them. Personally I would advise that you deep fry the wings and then toss in a large bowl with enough sauce to coat the wings, not float them.

- I don't know the specifics, but I know it's not more than the extraction process. When aluminum is mined, it is in the form of bauxite ore. From this ore, only about half contains aluminum oxide. Then, from the mass of aluminum oxide (alumina), only about half of that will yield the pure aluminum we use for cans, airplanes, etc. So for every 2000 pounds that are mined, we only get about 500 pounds of aluminum. The process is extremely energy intensive and tears up the landscape where bauxite is mined. Transport adds to the pollution. Some of the biggest bauxite producers in the world are China, Russia, Canada, the United States, Australia, and Brazil, so overseas transport is frequently involved, especially in countries that use a lot of it. Furthermore, it is often shipped in bauxite or alumina form, when it is heavier to carry. Aluminum recycling, however, starts with the pure product and ends with the pure product, and the process is fairly quick. - I removed all of mine from the inside, not that this will work for you. I removed all of the inside wood pieces holding the window, there were no pieces on the bottom. If there is a nailing fin, you may now cut this from the inside. If these windows replaced other windows in the past, or are not original to the house, there may be no fin at all, there could be screws or they may just all be held in by the trim, you will find out. If the windows are operable, you may be able to at least get the operable piece out, making the whole thing lighter and less likely to break all over the place. If you do not mind broken glas, you can break the old one and the frame will sorta crumple for you, making it easier to pull out. When you slip the new ones in, the can go in tight to whatever was holding the other windows.
