Q:On a free standing carport with an 8 inch, 22 foot long aluminum i-beam, would a steel 8-inch i-beam be just as strong? I am looking into it since they are cheaper.
steel is definitely cheaper than aluminum. for the same size, steel is stronger. and much heavier. it may/will require stronger support posts. you'll want to be careful not to set up a galvanic reaction where you have steel and aluminum meet. stainless steel is much more expensive. you just want to make sure your steel beams have a good rustproof coating. either zinc plate or paint.

A true structural steel building is composed of steel columns, steel bar joist,steel purlins,steel roof frames,and steel siding. This is all load bearing structural steel. The vulnerable area of a steel building is the exposure of this steel to extreme temps during a fire. Steel becomes weak at high temps and begins to twist and distort like a noodle in hot water. Most all steel buildings now are specified by the architect/engineer to have fire retardant spray applied to the key components to protect against high heat during a fire. Even with that some beams/columns are also wrapped with several layers of type x fire rated drywall. Multi story steel buildings usually have lightweight concrete poured over steel decking for all floors above the ground floor. Any and all penetrations in these concrete floors must be sealed around to stop fire and smoke from spreading from one floor to the next, and fire rated doors at all stairways to each floor. Even ductwork that runs to other floors must have fire rated dampers that close if signaled by a sensor, this stops smoke/fire from spreading through the ductwork. Sprinkler systems are usually required in new structures that exceed at pre-determined square footage by the state you are in. Hope this helps you out.
Q:Many gerber knives are made out of what gerber calls high Carbon steels and I was wondering if anyone knew exactly what is this mysterious steel.
Carbon, when added to steel increases the hardness of the metal. The higher the carbon content the harder(pure carbon = diamond) the blade will be and the longer it will hold its sharpened edge. Too much carbon however can make it too brittle to use as a blade. iron, carbon and chromium(for the stainless in stainless steel) mixed in the right portion makes a high carbon stainless steel knife. All of which is kinda pointless if the blade is not forged correctly.

Q:When maintaining a japanese knife: Is a honing steel still necessary if I have a fine 3000/8000 grit whetstone?which do you prefer?
A steel is to clean off an edge and remove any bends on the bevel, it is not directly for sharpening as it removes no material from the knife (or should not). A whetstone, however fine, does remove material. A steel to maintain an edge, a stone to restore an edge. They are different items for different purposes.
Q:and also what makes different hardness of stainless steel?
a little clarification. steel doesn't become stainless. There are many different types of steel, which is an alloy of iron and other element. The other elements determine things like hardness, corrosion resistance, etc. One element is chromium, which when added in the correct proportions, forms stainless steel. PS, there are many many different stainless steels, with different proportions.
Q:If steel content is too cheap, what content should I be looking for? I don't think I could find something like a VG-10 here...
I am a former chef and have used Chinese chefs knives, different types from cleavers, even french knives, they are mostly carbon steel, and are made with a cold forged process, they are as good as the European knives and are marketability cheaper, I have one a french knife a 8 one with a green non porous handle. I like it, it is light weight and very well made, and keeps an edge quite well, just look for the better type available.
